I've both purchased knives and had my knives sharpened by the folks over at Epicurean Edge. The selection of knives they've got is better than i've found anywhere else ... even than on trips to Japan. Their prices, surprisingly seemed to be about the same (or even a little less) than the prices for similar knives in stores in Japan.
The sharpening that I had done at the Epicurean Edge was sharper than when the knives were new and lasted longer. It wasn't cheap, but as a professional chef, it was definitely worth it!
